Since the start of the COVID-19 crisis, my partner and I have been stuck hundreds of miles from my home. It seemed like a good idea to stay in our country of origin, especially considering the risks at hand for our families. But even so, it has been tough spending months in an Airbnb, far from our creature comforts.
One of the big difficulties we have faced is remaining healthy. Working out at home quickly became part of our routines, but food was more difficult. At first, during hard lockdown, we bought microwave meals a lot of the time. When restaurants reopened for delivery, takeout became our go-to.
However, we never felt healthy eating this way. The problem was, quite simply, that we did not have the pantry ingredients necessary to make wholesome meals and, since we don’t know how long we will be staying, we don’t want to buy them.

One of the easiest and cheapest ways to eat healthy is to embrace simplicity. Many people avoid cooking in general because it is tiring and difficult and they don’t know what to cook. But a good meal does not have to be complicated.
Rather than trying to cook elaborate dishes, cook a protein and fry some vegetables. All you really need is salt and pepper, but you can add any other staples. You don’t need to have a full spice rack to do so.
